Ingredients You’ll Need

For Appam:

  • 2 cups raw rice (or appam flour)
  • ½ cup cooked rice
  • 1 cup thick coconut milk
  • 1 tsp sugar
  • ½ tsp dry yeast
  • Salt to taste
  • Water as needed

For Egg Curry:

  • 4 boiled eggs
  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Curry leaves
  • Mustard seeds
  • Coconut oil
  • Salt to taste


Step-by-Step Instructions

1. Prepare the Appam Batter

  • Soak rice for 4–5 hours.
  • Grind the soaked rice with cooked rice and coconut milk to a smooth batter.
  • Dissolve yeast in warm water with sugar, then add to the batter.
  • Let it ferment overnight or 6–8 hours.
  • Add salt before making appams.

2. Cook the Appam

  • Heat an appam pan (or non-stick pan).
  • Pour a ladle of batter and swirl it to spread.
  • Cover and cook on low flame for 2–3 minutes.
  • No need to flip!

3. Make the Egg Curry

  • Heat coconut oil in a pan. Add mustard seeds and curry leaves.
  • Sauté onions till golden, then add ginger-garlic paste.
  • Add tomatoes, salt, and spices. Cook until soft.

  • Gently place the boiled eggs into the curry.
